we would always have potatoes during the week.
my mom was saving up for the weekend where she would cook something more 'sophisticated'. meat was rare, maybe a chicken thigh or two in a soup, or chicken livers roasted with onions and served with polenta. my folks dont eat pork.
mom would push the limits.
but to this day, potatoes and polenta with a little bit of cheese is soulfood to me.
