Holy , some restaurant quality cooking there my friend. Super pro looking!

Do you guys use the prepared red Thai curry pastes in your base?

We've been making the rounds trying most of them that we can find, currently on this one

Haven't found a favorite yet.. some are hotter, some are more fragrant, lots of learning still
We sometimes or often use that paste in our red Thai curries, but we add finely minced fresh garlic, finely minced ginger, and kaffir lime leaves, as well as a squirt or so of lime juice and a good quality, thick coconut milk that borders on coconut cream.

Did he have the control fan?
No.

He primarily lives on a simple solar system with a collection of deep-cycle house batteries, and when necessary, alternates numerous Honda Inverter 2000-watt generators, running one at a time in his old generator shed, and bringing one out from behind his wood stove in his house to replace the one that's been running in the gen shed on an extended-run fuel tank for the previous 12 or so hours, of which he's gone through many over the years, after he ceased running a 5,500-watt Northern Lights Lugger diesel generator for years before that, so his use of electrical varies from limited and necessary, to very little much of the time.

Yes, I know the fan in reference would draw very little, but the Green Egg is so well insulated that use of wood/charcoal is far less than many, and the heat distribution without the fan is more than adequate.

Edit: I wasn't even aware there was such a fan until reading your post.

That's awesome. I'm excited to use it. I couldn't help but buy it for the price. I'm sure it's sweet even without the fan but Inkbird has asked me before if I wanted to test one and do a review but I didn't have an egg. So if they're still looking for reviews, I'll gladly try it. I'm definitely gonna try it without a fan though first for sure. The only other accessory that I think I'll need to get is the pizza stone.
