where the stalk grows out the side of the main stem, there is a fan leaf. Leave the fan leaf, snip the side stalk.

That's what I and many others do that don't like to remove healthy fan leaves. I thought there was something bizarre going on that wasn't clear in the photograph.

you should check out tom hill or butte, they appear to be the best at what WE do, HUGE HUGE harvests by those guys,MUCH respect!!
