The main reason is to keep fusel oils from forming... which are major contributors to hangovers. Done right, it still tests out at 18-20'ish%.
Yeast has a problem with alcohol content and excessive carbonation. If you can keep oxygen out of the process, keep things cool, and degass regularly, your yeast will only die off due to excessive alcohol. This means a higher alcohol content vs. a non-degassed version of the same must.

was a glass tube tester probably not the most accurate coulda been 18% still tho that is strong wineholly cow man! 20%+ home made wine
is that normal or did you guys add some honey or something to the wine? to kick it up a notch
i have a friend who brews his own beer in his garage
its awesome! and he wins prizes in local competitions
its probably around 7% but one of the best pilsners ive ever had
they also make kick ass sausages too

2 gallons juice (orange, apple, almost anything but pineapple due to bacteria?)
Can of peaches
Napkin
String or Rubber Band
Crack a can of peaches
Place the napkin over the top of the can
Tie it off with band or string
2 days later...
Double bag the juice
Dump the contents of the can of peaches in
Twist bag at halfway point and shake gently
Gently tie off bag so it can be untied easily
Set where top of bag will not leak if your knot was bad
Once or twice a day when folks are most likely NOT going to notice fermentation smells...
Gently shake and untie knot enough so you can degass and deflate the bag
13'ish days it'll be done

i didnt see anything about yeast in that recipe.wheres the yeast coming from?How about tying it up on an angle so that the corner is pointing down and letting the yeast settle out for a day or two and then cutting the corner of the bag and blowing off the bottom layer, letting the clear hooch pour into a ready container??
Yeast can seriously wreck the guts in that amount, although that could be a beneficial deterrent in a prison setting...

oh.in that case it would work.dont know about prison but i did a week in the hole in jail for making hooch.not even worth itI'm guessing that is what the peaches are all about...
