Lemon juice kills coffee mate. Kills it dead.

I'm sick with a cold or something. I made a rum and weed hot toddy today so I'd feel better. Hot water, simple syrup, dark rum, and weed tincture. It was delicious. I made a second one, only I added coffee mate to make it creamy. Also delicious. I made a third one tonight, and I decided to add a splash of lemon juice.

As soon as I added the lemon juice, the coffee mate came out of solution and clumped up into little chunks. Fuck. No more creaminess. I ended up with a lemony rum weed hot toddy with chunks of clumped coffee mate floating around in it. Also delicious by the way.

Lemon juice makes casein (a milk protein) curdle and turn solid. Adding lemon juice to milk is one of the simplest forms of making cheese.

Sodium caseinate is the 3rd ingredient in Coffee Mate. You learn something every day, I guess. I wonder what Coffee Mate cheese would taste like.

Mine worked great for about a year. After a while the non-stick coating wore off and everything stuck to it. Plus I lost the little bowl thingy you put up front to catch the grease.
