my favourite chef... when i used to drink and cook often , together i would follow his regime. pour a little wine in to deglaze the pan and make a jus , and then down the rest of the bottle while cooking the remaining parts

french trained michellin star chef too . he knew his onions, and did not fanny around when cooking

also, his time he would spend with the locals and explaining cultures in his own way ... top geezer

i'm a self taught chef , as my parents worked long hours and my dinners were often rushed and tasted no good,,,, so i sacked my mother as chef and started cooking my own meals as i arrived home first from school . i would watch these tv cooking shows and copy them the best i could

' never season meat until it is sealed ' i learned that as a young boy from this video too.

I remember one episode where everything was going to shit and he just started swigging wine from the bottle haha
And another at a Thai or Malaysian army base. People were playing volleyball and it kept smashing into his gas stove causing havoc and in true Keith form, he just kept pouring red into his glass and cracking on with the show.
