Liking the look of that Sauerkraut GS, i had some chilli & dill not to long a go.. Its actually becoming a bit of a staple diet of mine. Its rater expensive for a jar from the local health store, 5.50 euro which is equivalent to a jam jar in size.

Considering the price of a cabbage is not much more than 1 euro, i just might start making my own, i have looked in to several methods of the prep side of it.. The last time i tried making it, was very off-putting as a layer of scum had developed on the top of it so i chucked it out "now i know i should of just removed the scum layer and made sure it was always below the liquid level" i felt very foolish for throwing it out. I will try making it again for sure.

I use these self-burping lids. Fill your jar and forget about it until it's done fermenting. I've never had mold or scum using them as they do not let oxygen inside the jars.

More Sauerkraut. I used a 4lb green cabbage, 3 grated beets, 3 grated carrots and 2 1/2 TBSP sea salt. Ginger optional.
