I'll keep working on it, in between getting the brine buckets and smoker ready for traditional style Native salmon strips.

Walk-in smoker's cleaned, stainless racks are all cleaned and rinsed, intake and outlet screened vents on the smoker are vacuumed out, the brine buckets are cleaned out and rinsed, the 1"x 10" pine board that'll serve as a surface for cutting strips is on the work table in front of the barn, the moose knives are located and mostly ready, the alder that was cut green the other day is all peeled and waiting to be cut into 10-12" lengths for the conventional fillet smoking, and the river aspen that'll substitute for the balsam poplar is all around us, just waiting for the chainsaw to cut it into lengths for the cold-smoked Native-style strips.

Breakfast sausage links are frying in the cast iron skillet at the moment, and there'll be some keto bread in the toaster very soon to accompany the easy-over egg that'll go on top of it with some cheddar cheese melted and some Tapatio Sauce.

A fairly productive day. :)
