"Mexican" food like "Chinese" food, usually resembles nothing of it's native roots.

Go to Spain or Mexico, and try and find a Chimichanga...

I also doubt there are many, "all you can eat" buffets in China. With General Tso's chicken and Sweet and Sour pork...

Rant off...

I would love to go and do a food tour of Spain...That would rock!

On to more important things...PORK!

I just started a 11 hour slow cook of a 7 lb. Pork Shoulder.... Pics to follow.

How about including a DIY with that if you don't mind CT ?

Nothing major, maybe an ingredients list, cook prep and cooking times.

TIA

5-7 lb Pork Shoulder butt roast

14 oz. of beef broth

put the beef broth in a slow cooker, and then put the shoulder in. Cook for 10--11 hours on low.

Pull it out and shred it with a couple forks, then stir in your favorite BBQ sauce. Serve on a bun.

Paradise I tell ya!

Paradise I tell ya!

We did the damn thing Gulf Coast style tonight. I wanted to share with you how we eat on the Emerald Coast....

We did get crab legs which of course come from Alaska, but it is traditional at the swamp to appetize with em.

We got a hold of a really nice grouper today. Grouper is the kind bud of the fish world. Here are a few pics from start to finish. (Kinda)

A note on shrimp

A note on shrimp

I just wanted to let you in on a little inside knowledge. If a store or restaurant tells you that their shrimp is fresh and not frozen, they are full of shit. Shrimp gets frozen on the boat. Here we have big freezer boats that go out in the gulf for a few days and come back with a shitload of frozen shrimp. So it is impossible to get fresh unfrozen shrimp unless you catch em yourself.

This does not effect the quality of shrimp like it does fish.

Just a little slice of wisdom I wanted to share with the Fam.

Peace.

Here are some follow up pics of the ribs i did last night!
One hour into slow cooking

and the sauce

Dont have any pics on plates, my hands were too messy to grab the cam :joint:
