Currently on day 57 of my first grow. Thinking I may chop on Wednesday morning (day 60). Growing Sherbet/Animal x ChemD/ChemSis from Cannarado Genetics. Website says 65-70 days, but they are starting to show amber and have stopped pushing out new hairs

It's hard to say... I would but I don't know the strain.
You get a slightly more "up" effect if you harvest earlier and a "stony" effect if you harvest later.
You also get more weight the longer you wait.
Waiting wouldn't hurt.
I would grab a sample bud to dry now and harvest in a week and compare after the cure, if you are keeping cuts.

Update- day 61. Debating if I let it go through tomorrow and chopping first thing morning of day 63, or giving it one more water tmrw day 62 and taking them into day 65 and chopping Monday. Help… lol
Reason for some different days here, I would ideally like 2 full days between final water and chop. I know I’m real close and maybe I’m splitting hairs here between Saturday and Monday. Leaves are really starting to crisp up and fall off now too. Seeing difference from start of day to end of day.
