This thread is for anyone who likes baking and sweets. I’m going to start things off on this rainy day with a carrot cake I’ve had bookmarked for some time now. Thanks @Timj for inspiration.

Carrots and nuts ready for egg/sugar mixture:

Egg yolk mixture mostly mixed. If you have arthritic hands and or elbows use the electric beaters. Not a fun job.

Out of the oven and smelling oh so good. Deciding now to be bad and frost it up or enjoy a slightly healthier non frosted cake. Hmmmmmm. Decisions decisions decisions. I must contemplate over another bong hit. Yes that is the decision.

Found the Pictures. This recipe uses a cream cheese/butter frosting. I also added coarse chopped walnuts to mine.

Oh so nice! I decided to frost up the cake a little. Gently tapped some powdered sugar on the top. The almonds in this recipe really add a wonderful touch. The “palette report” is thumbs up. Moist, flavorful, less unhealthy than other cakes. The carrot and almond flavors blend nicely for a smooth taste on the palette. Really no frosting needed but for those who want to indulge, it does take to the next level. Only half cup of flour for those who are ignoring their doctors about gluten. Now where to go from here...

I used a food grinder, I think Hamilton beach, to finely chop carrots and nuts. Worked out nicely and saved my fingers some chopping. I must say that giant piece of cake with carrots looks amazing!

I grate the carrots for that recipe in a standard box grater using the coarse side. I have a grater attachment for my Kitchen aid mixer. But, it's a PIA to clean by hand. No dishwasher in my house.

Has anyone ever made Peanut butter cream pie. It sounded interesting. After making it once and loving it. I made 2 and froze one the second time I made the recipe. I make my own gram cracker crust and make fresh whipped cream for my version. Here's the basic recipe.

I have a dishwasher but she complains, sometimes loudly..

That peanut butter cream pie looks phenomenal. I’ve not made it but have in the past made a cheesecake with home made graham cracker crust .

That's funny about your dishwasher. That pie is something we were't sure we'd like. But, we love it. I only make these desserts once a year so they are special. And I always share them with my family and neighbors.

Today was a sweet bread. Honey glaze on the inside, nuts and powdered sugar mixture piled high on top of the honey, rolled and baked! Oh so sweet...

The physically challenged loaf split apart and you can see the sweetness inside.

My rhubarb has taken off this year. This Old fashion rhubarb pudding cake is the reason I grow it. Sweet-n-tart with a crunchy crust, soft cake and pudding like filling, this cake is amazing.
