Ah ok, yeah dry brining a steak makes the meat a little more pink after cooking, i noticed that took when i dry brined some steaks earlier this year, on ur recommendation.

Reek did say earlier today that he could have handled the stop differently, he rolled up his window cause he didnt want a lot of passersby staring at him, taking pics putting them on social media, etc
Maybe he should have tried to play the "do u know who i am?" card, but more sympathetically, like Pops said, maybe they give him an escort to the stadium. The whole thing just started out bad and unfortunately the police have a monopoly on the use of force, any other profession they cant get physical with u if ur rude to them but cops can.

I think lamb isnt as nearly as gamey as venison/deer meat, or even bison/beefalo meat. Lamb is pretty pricey too so Hawk had the hookup growing up. Can u still get meat from him, does he still raise any animals?

Very nice, DB, ur too skinny. I say anything under 300lbs is practically anorexic for u. You need to fill out that big beautiful body of yours with some proper eats. When was the last time u went to Burger King? Wendys? U love their baconators, dont u? Unfortunately all the wendy's near me tend to be pretty awful most of the time.
Dont forget general gao's chicken, u should eat that like 2-3x a week if u can. It's got some broccoli so it's practically diet food.

i doubt i can get that meat now since he kicked my dad out of one of his farms. long shitty story there. nah lamb isnt really gamy but does have a unique taste. these lamb chops were out of this world and i made the best meatballs ever with the ground lamb. this was when i was just learning how to properly cook too. i bet i could blow you guys away with that meat now

meat from the ranch is a lot better but what can you do if your dad is cut off
im seen vids of people dry aging their steaks till it looks like some kind of mummy, i mean what is the limit
but it tastes good

im just guessing they are $250 but i bet im pretty damn close. im not sure comparing dry aged steak to wine is a good analogy or not. hes talking about grape juice and wine. well steak and grape juice arent gonna get you drunk. at the end of the day i can get full on a regular steak and a dry aged steak. out all them only wines gonna get me drunk. they are 2 different things.

maybe its cause im buzzed but im not one of those guys that drinks wine for the taste although i do like a good wine ive never had one good enough to where im gonna go out of my way to find it just cause i liked the taste. just like im not gonna go out of my way to find a $250 steak.sorry im pretty buzzed and pissed off. thats the best i can do right now. probably is a good analogy cause wine snobs are the worst. at the end of the day if you arent drinking wine to get drunk your just a pretentious snob.my taste buds are more refined than most. a $1000 bottle of wine is not gonna fill in that $900 gap for a good $100 bottle for me. fukit im done.im rambling at this point

Jaguars, Buccaneers, and some Saints and Falcons occasionally. That's why I was happy that Lawrence looked very good and Mayfield had a great game. The Bucs looked less mechanical on and off the field.

I had to check the topo map to give you an accurate elevation here. 270 ft. above sea level is high altitude for Florida.

I enjoyed the dry brining, seemed to work well, then i made the mistake of doing it on steaks that were too thin and it ended up being too salty. Ive mostly been cooking skirt steaks since then and i was marinading those, also did sous vide one time, so havent done much dry brining since. Will it work on a larger cut of meat, like a roast?

A good lamp chop is just as tasty as beef, i agree. Shawarma places will layer lamb fat on top of their beef spits so as the whole thing cooks the lamb fat will melt and drip over the beef, giving it lamb flavor without the lamb price.
Isnt lamb a baby sheep tho? Cute buggers, sad to kill them so young but they are nice and tender at that age.

Reek has a history of domestic violence, nothing that recent tho, but i think he's fathered a few kids out of wedlock recently so he's still not that sympathetic. Maybe he needed to be humbled at least once in his life but im not sure that's the cop's job to do it.

Ive had dry aged steak before, it's good stuff, intensifies the beef flavor. U cut off all the moldy parts before serving, that's why it's so expensive, it's prime grade to begin with then u lose like 40% due to moisture loss and trimming. You can dry age steaks at home too, i think there's special bags online u can buy that help control humidity.

Isnt it pretty well established that blind taste tests of wine experts result in them not being to tell the difference between a $20 bottle and a $500 bottle?

Ill be sure to tune in tonite, Buzz, im sure Achane will run better than Flipper, mostly on account he actually has feet. But I have Bills +2.5, this game is at night so i dont think the Fins have the home field advantage they normally do during day games early in the season (opponents dont have shade and bake in the sun).

thats a good question. im pretty sure it wont do much for a roast. its to thick to penetrate.yes lamb refers to a baby sheep and mutton refers to a sheep over 2 years old. ive never had mutton and not sure if ive ever even seen it. id try it though.think im gonna have to get some lamb next month. im already broke for the month. i shouldnt of spent that much at famous daves but the baby backs were limited time only

i know they cut the mold off. cant really say much cause ive never had proper dry aged steak. most people dont even know what it is.the average persons stupidity and ignorance fascinates me. not to say they are the same thing.where did you have it and how much does it cost? i want to try Michael Jordons Steak House for shits and giggles one day but Bavettes Bar and Boeuf in Chicago is the place to go for dry aged steak i hear.maybe one day. dont have money for $200 steaks

yeah wine is a funny thing.i get that Barefoot wine to drink and cook with. its less than $10 a bottle and has won some awards.my cousin and his wife own a fancy wine club bar or whatever its called in Davenport called the Grape Life. ive only been there once like 10 years ago. maybe ill check it out. its only like 5 or 10 minutes away

The Dolphins will not be freezing in Buffalo tonight at least.

Miami is under a Heat Advisory today with a forecast low of 79F tonight and showers possible. Poor Boys from Buffalo are going to get steamy with those conditions.

the thing is is i cant really drink wine! it gives me a headache if i drink enough to get a decent buzz on and is just not worth it to me
but i get how some people like it just like some people like fancy cigars or whatever
it would take me at least a gallon of strong wine to get me drunk. i drink it with beer and just adds to the buzz. i would get sick too after drinking a gallon

lucky for me i rarely get headaches. my brain is all fucked up though. i get weird sensations but dont remember the last time i had a headache

A quick search shows larger cuts of meat being dry brined, including whole chickens. So maybe it's something i can try, ill let u know how it turns out. After all, even a wet marinade doesnt penetrate that deep into a thick cut of meat.

Maybe it's the mutton that's gamey then, lamb being so young hasnt developed that full mutton flavor/gaminess yet.

Funny u mentioned Jordan's steak house, that's where i had the dry aged steak. Price wise it wasnt too bad, like $50 but that was close to 10 yrs ago, probably more like 90 or up now.
The moldy bits of steak trimmed off dry aged meat u can dehydrate to make jerky or use them in burger meat, give them to the dog, etc.

It's looking a little wet in South FL, Buzz, so maybe the under is the way to go this game. Most people are on the Bills, which means to bet the house on the Fins. I'll take the moneyline at -140 tho, keep it safe...

Puka has gone to injured reserve with a knee injury (bursitis?), Pops, u think the rookie jordan whittington steps up or is it newcome demarcus robinson, who had a nice run with the chiefs at the end of last season? There's tyler johnson too, he's looking decent. Or will Kupp's cup runneth over with 12+ targets every game that puka misses?

So dry aging. I do this. Half a rib eye almost 2 weeks in now. Won't let it go much longer. Temperature control is very important. 35-40 and you're good. You're probably mistaking fat for mold. I hope. It doesn't mold. It's all enzymatic and it produces a bit of heat, making it hard to control the temperature and I'd think those bags would trap heat.

Yay Tua just threw an INT. Not good historically vs Bills.

Bought a couple whole rib eyes, (for $300 @ $9/lb) cut one in half, put the fat half in an overpriced gadget called the steakager.

At 14-20 days, meat candy. Shit you not. The downside is trimming loss, one reason not to go longer than a couple weeks. The flavor changes in a bad way after that as well.

HOLY SHIT! dont tell me you got the $5700 one. even the cheap one is $1300.you must really like dry aged steak. i guess if you eat enough it pays for itself but damn
