about keeping chilies - i boilt mine in vinegar with salt and sugar and jarred them covered with the vinegar mix, and they are still good, about 8 months later.
i sterilized masonry jars in presure cooker before i filled them with the boilt mix. its enought o just quickly boil them, no need for a long cooking..
they get a lot like the typical jarred jalapeños in consistency, and on top you can use the vinegar as hotsauce..
