I recently pickled some banana peppers and the flavor is great but the texture is a little mushy. Can anyone help me with this kind of problem?

Anyhow, all the peppers died, the South Florida heat burned the little seedlings and I was needing to water everyday because the soil would dry up. I guess I should have put them in a non-direct sunlight area but I don't really have one in my yard.
Can you guys give me some "hints and tips" for growing peppers, mainly germination of the bhut jolokia
