Any canoeist here?

I'd agree with your statement, they can be harder to control in high winds. But, most damage on a canoe is on the keel,bow and stern from rocky landings or white water. Most adventure canoeist use prospector style designs that do not have a defined keel. Most also add skid plates like this one has on the bow and stern.

Not only high wind just making sharp turns . There are no rocks in the pines, just sand . I have had my Michicraft out on the Delaware with rocks and the big problem with a keel is that it catches the rocks and you can flip easier but on the other hand you can turn quicker it avoid them . Wind just sucks either way

When I was a teen my favorite park of camp was the fishing/canoeing. I'd love to start up both again.

@Old Piney, I don't think we'll need to make any fancy moves while I'm teaching him basic paddle strokes and bracing. I'll introduce my son to canoeing on a pond near our home that has a small beach. I'll teach him self rescue on the beach once it gets warmer in the late spring. It's a longer narrow body of water so we might be in a headwind in one direction or the other. I love fishing and camping too @cbotany .
