Yes, grapes can be done, but most bonsai folks I know say you have to keep them trimmed hard to a short size - say 12-20", otherwise they don't do well in a small pot with small root mass. Varieties with smaller leaves are kept on the shorter side, larger leaved varieties are kept on the larger side.
If you don't mind a step up size wise, then you could probably take them to 3' ( in a larger pot ) and keep the bonsai look to them.
