Yeh, try double boiling some soy milk with a couple grams of herb, strain it off,then enjoy!! You could use this in any recipe that calls for milk or just put on on some granola. I cook with regular milk allot and it works great, haven't tried it with soy but i read somewhere that it will work just as god. The THC should bond to the oil in the soy beans when it is heated so it makes sense that it would work. My favorite is a morning cani-mocha!!
Are you looking for canna recipes? If so, I have a recipe for vegan twinkies (I make them as cream-filled cupcakes) that you'll love, uses canna-oil, some other treats too. If you're just looking for general vegan recipes, I'll dig out some links later today and post them up. I'm not vegan anymore, but I still use most of the recipes.

I'd make an extraction using oil, but using the method described in the thread "easy cannabutter in 7 steps" or something like that. I've been using butter, but if you used oil, you could skim it off the top pretty easily. I wouldn't waste time making edibles just to have an 1/8th of ground plant matter in my cookie. The whole point is not having to eat the weed itself, and to blend it into other things that are enjoyable to eat. I've found certain things blend with the weed flavor nicely, or hide it entirely. Hope this all helps.
Oh, and by the way, props for caring what your vegan friends eat or don't eat. Most people won't absorb the fact that vegan means NO animal products at all. Some people need to be told several times that yes, gravy contains animal products!
