I'm not sure if this is something you would think to do anyway but on the chance it isn't I thought i should mention it. I was watching a YouTube video that featured some popular YouTubers who there whole channel is about smoking and bbqing meat. They were at a festival of sorts put on by another popular YouTuber in Texas, called "Meat Feast". The Texas YouTuber had just recently got into smoking meat and so he called these other YouTubers in not only to participate but also to give him tips on his own smoked efforts. They of course came with nice big slabs of untrimmed brisket and as they trimmed the fat off they threw the fat into a pan and they put that in the smoker to render it down during the phase where the now trimmed brisket was being smoked unwrapped. Then when it came time to wrap the brisket, they took some of the renderd fat and poured it into the foil surrounding the brisket before they closed it up. The purpose being to help kep the brisket nice and moist and juicy. I think there was also a point where they checked the brisket by openning up the foil and if it was dry they added some more of the rendered fat. I only saw this in the video as I wan't at this meat feat butt when the brisket was done it sure did look nice and moist/juicy/tasty.The little foil packs I made worked fine. Just enough smoke, I didn’t have to change them out before it was time to wrap it. My next challenge will be trimming the whole one rather than taking the easy way out of buying one trimmed. The whole ones were 6.99 lb for the prime ones but the trimmed one all trimmed and prettied up were 11.99 lb. The whole one took up the whole grocery cart bottom. I was afraid of trimming all that fat off. Just plain scared but I need to brave up…. There is a lot of fat on them whew. I’m gonna smoke something again. Maybe pork next. I know you have been cooking and prepping all day. Are you eating at home or going somewhere to eat (or both) ?
