2 months? It'll be almost crystal clear and a beautiful, deep shade of pink/rose red.

Will you rack this Beet wine to a secondary for clarification?

Ever tried using bentonite clay to get the last of the pectins and other plant matters that settle out without having to use a chem flocculent? Thats what I used on the batch of hard cider Im currently drinking, and Im pleased with how clear my batch turned out. Almost as clear as Martinelli sparkling apple, and I started with local unadulterated cider that was very dark and cloudy at first.

Are you using wine yeast?

It's nearly 100$ in honey plus 36lbs of beets to fill that 6 gallon carboy... but I'll get it done. LOL

I'll definitely post up a pic when it gets filled. I'll also try to make sure I get a pic of these jugs before I rack them in 2 months. Show you how clear it is. Wonder how long this batch will last. :)
