Okay, so what do you do with the main stem/cola? Always goes under the screen? Sry for newbness

All you want above the screen are colas. Anytime the stalk or stems poke through the screen, poke them back down through the same hole. They'll pop up again a day or three later one hole out and you poke them back under.

With an Indica fill 1/2 the screen, flip to 12/12 allowing the stretch to fill the remaining screen. Once you see buds forming (real buds not preflowers) let those above the screen.

With sativas, flip to 12/12 before you hit the screen as they will stretch continuously through the grow. With lamps smaller than 600, strongly consider growing colas horizontally after they grow through the screen by tying them down with: twist ties, plant tape, pipe cleaners etc. This is because smaller lamps have limited penetration. Horizontal colas will look funny but, smoke fine.
