Start off with a quality grade of Beef Skirt Steak. This one is a "choice" grade, and is Black Angus beef. I stuff with, Organic spinach,sweet red bells,large button mushrooms,red onion, and feta cheese

Cut up your vegies, lay out the skirt on wax paper

Have your butchers string at hand, and some extra thick slices of Peppered bacon. Cut the Feta cheese block into 1/2" square by 3" long

Lay your vegies and Feta out like this on top of the Skirt

Ok I made a mistake. I stoked a bongload before rolling this skirt up. I tied the strings without the bacon in place. I had to go back and use a tool to slide the bacon in place under the butchers twine.

Got Your bacon in place, Sharp knife, wrap the roll tightly in cling wrap.

Slice between the strings and keep your fingers clear.
