I just chopped it up then fried it in beef fat - I sometimes get more creative with it and add chorizo or bacon/panceta - maybe some parsley if I have vegans visiting!

For a ribeye you would ask for a chuletón.I think you'd be asking for lomo alto at the butchers - but in restaurants the closest would be entrecote - I'm thinking of doing a photo blog to reverse follow the journey of my meat - butcher to farmer
