Despojo de cabrito - liver, heart, lungs, spleen, pancreas and oesophagus of a kid. It comes out of the carcass all joined together. I just chopped it up then fried it in beef fat - I sometimes get more creative with it and add chorizo or bacon/panceta - maybe some parsley if I have vegans visiting!

@El Timbo have you been to spannabis? i saw on breeder steves IG that they came out with a new rendition of the spice of life adventure mix and apparently they were pre distributing it there.

No I didn't go - I saw that in his March newsletter - both versions very tempting.

I think you'd be asking for lomo alto at the butchers - but in restaurants the closest would be entrecote - I'm thinking of doing a photo blog to reverse follow the journey of my meat - butcher to farmer

For a ribeye you would ask for a chuletón.

off to my mothers for lunch at the local pub , and back home later to make some hash . i will freeze three batches , and spin each batch twice , and keep separate
