Use a shot glass full of water and soak the beans for 8 hours.. come back poke down see if they sink.

after another 6-8 hours see if they started cracking.

some use paper towels after that.

some use 1000 grit sandpaper and very very lightly sand some of the outer shell.

had seeds out sound of fridge last 5 plus years.

It is really hard to say. I have used older seeds in the past without knowing how warm they had gotten. A batch of seeds in the three year old range had almost 20% germination, 39 out of 200.

But if all of a smaller sample are like the 160 that did not germinate, then my getting some does not matter. If the seeds are OK now and kept cold and airtight they should last three years. Some batches of store bought seeds have had 3 out of 10 not germinate when new, so cannot really tell.

Damn not one person read the OP's original post.

Your seeds will be fine for years in the fridge, leaving them out for 3 weeks is not an issue.

Yeah 3 weeks is nothing I would put them in a color Tupperware but really light is only on when fridge is open. only question to me would be how old the seeds are ie how long seedsman has had. The germination rate will drop through the years but not from the 3 weeks out.

how many years dyu tink?

No one knows the answer for sure.

I've had seeds stored 10 years in a desk drawer, and every one germinated..
Other times, seeds from last year had a 25% germination rate..

Just store them as best as you see fit, and hope for the best...
