Sardines :)

Please dont move this thread mods cause its pretty specific and I need the input....

Hello guys

Just a quick one:

What are the best ways to prepare sardines? Unfortunately I can only get the tinned variety... no fresh in my part of the world :(

It all depends on the kind of tinned ones.
Tomato sauce, olive oil or brine?

Ok then

Sardines spaghetti recipe
Boil the past until al dente and reserve.
In a saucepan heat some olive oil in a low setting and add 1garlic clover and half onion thinly sliced until the onion becomes transparent.
Add two red tomatoes chopped or 100grs of canned tomatoes
Add the whole content of the sardines tin
Add some chopped fresh herbs (basil,oregano,parsley,coriander)
And finally 1cup of cream/double cream
Season to taste with salt, pepper and nutmeg
When the cream starts to boil add the pasta and turn off the heat
Mix well and if you like cheese in your fish you can grate some parmesan or any other strong&hard cheese before you plate up

You can also make very nice sardine quiches
Or sardine sandwiches
Or a nice salad with tinned sardines, olives, grilled red peppers, onions and tomatoes
