I think when you cut the top off you would have left just a tiny bit of the growing tip that recovered.

Wait..are u saying u topped it and it grew just the single nod back? As chicken said above if u left anything on the grow tip it will just recover.you have to completely remove it or its just fimming it basically.

Yes. The apical meristem was removed completely and a new shoot emerged from the cut site. I have never seen this before.
