If I decided to go this route what should I say the sub panel is for?
I would say that you are a ceramics artist, and you are finishing the attic to turn into a ceramics studio. The subpanel is for a kiln (240V) and some outlets (120V) are for wheels, a pug, ventilation fans (kiln rooms must be vented because of toxic fumes produced while firing), etc.
I am a ceramics artist myself, and the excuse has always served me well.
P.S. - Installing a new 40A 240V circuit in your main panel involves more than just plugging in a new circuit-breaker. You also have to snake cable from your main to the subpanel, and hook it up to the new breakers. You also have to know what breaker and cable to use, and be sure that your main breaker can handle an additional 40 amps.
