You should pH every watering, if pH gets too high or too low the plant will stop growing because the nutrients are locked out. Nutrients aren't absorbed as soon as you feed, its a gradual process. Especially if your medium has nutrients in it, i.e. worm castings, bat guano, Blood/bone meal, etc. Nutrients are locked out if the pH isn't optimum and if temperatures in the medium are too cold. Also a rise and fall of pH, (like you are describing) will cause other plant problems, plants like a stable climate and fluctuating your pH too much will cause stress, i.e. herms. Hope this was more of what you were after.

Edit: In soil, soilless mixtures, the optimum pH is between 6.0-6.3. This allows the most nutrients to be readily available to the plant when it needs them. 5.5 would be locking out a lot of nutrients, the most important being Nitrogen. Also in budding you should gradually lower your pH from 6.0-6.3 to right around the 5.8 range. Optimally you want to be at 5.8 during the 5th week of budding. This locks out the Nitrogen and increases the Phosphorus, Potassium uptake, which is crucial for big buds. Also it will make easier to flush, resulting in a much better, cleaner smoke.
