I always do the look, smell and taste test with old food, DB. As long as it passes each test in turn, u can proceed to the next step.

Here's my attempt at dry brining, i screwed up by putting plastic over it, but i took the plastic off just now and sopped up the liquid with a paper towel. Im planning to dry brine it for 48 hrs, is that how u do it? Also going to do the reverse sear, how do u do yours? Cook it on a rack for 30 mins in a 225F oven, then sear on a skillet?

Patriots did indeed win, DB, and actually scored some points! 3 td's before halftime, i was floored. Maybe Zappe is the real deal. Anyway, all my under bets lost last night. See Hawk, this is why u should inverse me, at least one of us will make $$.
Patriots still have the #2 overall draft pick since Arizona, the other 3 win team, is on bye this week. But this win means the bears have an even better hold on the #1 overall pick as the panthers are still stuck on 1 win with 5 more games to go.

yeah,dont wrap it up baba.i know germaphobes might not like it but thats the way.best to do it on a wire rack.you want to lose the moisture.if you wrap it its retaining moisture.on a wire rack you get more airflow.i didnt have a wire rack for a while so when one side got dry i would flip it.i was lazy.you dont need a wire rack if your creative.

you can pretty much let it dry for a while.a couple days is good.if your making biltong you can even do it up to a week or 2.maybe more from what ive read.never made biltong but i will one day.im gonna be honest with you baba.in my opinion you MUST sear it first.it doesnt make sense to put it in the oven first.the moisture is from the middle is gonna come to the surface and then when you do sear it,it wont have the sear cause its not dry.making the dry brine pointless.its like your pushing the moisture that came out back in.at least thats how i see it.i sear it then put it in an oven.actually im gonna tell you how steakhouses do it.

if you got a cast iron skillet,put it in the oven on the highest temp it will go.leave that pan in their as long as you can.about half an hour if you can.get your top burner as hot as it will get.take that pan out of the oven and put it on the burner with oil.judging by the size of your steaks,are they about half an inch?

maybe a minute to a minute and a half on each side then put it in the oven you had the pan heating up in.probably like 5 minutes tops.my times might be off but thats how i have done it for a while.now that i think about it,you might not even need to put it in the oven with the size of your steaks.sear both sides and baste with butter,garlic and rosemary or time sprigs.i probably showed this pic before but ill post it again.this was a prime strip and was the best steak ive ever had outside a steakhouse or what ive done on the grill.ive had a few people say ive made the best steak they ever had.
But go with what you like baba.i honestly hate giving cooking advice.some arseholes like steak welldone with ketchup.my mom went to outback steakhouse and ordered a filet mignon well done.she said it was the best she ever had.she has terrible taste in food.i wouldn't even cook a filet mignon like that on principle.that poor cow didn't die for your bad choices and sins.and it's a sin to cook a filet mignon well done.you want well done get another cut of beef you stupid uncultured ignornorant swine.not you baba.im talking about dumbasses

Did those wrist radios work well? Supposed to have a 70ft range, plus they had a beefy antenna sticking out of it. Nowadays they got something like this for kids:

Smaller, lighter, greater range and has a built in compass and flashlight.

I cooked up one of the steaks on a cast iron, theyre pretty thin like u said about half an inch so no reverse searing needed, but it was WAY too salty, i think i used enough salt to dry brine a 2 inch thick steak like one of ur prime cuts. I rinsed off the other steaks as best i could and found a rack to dry them on, hopefully once they dry out a bit ill sear em up and they wont be quite so salty.
And no worries about going off on people who dont know how to treat meat properly, i agree with u it's almost a tragedy when someone cooks a nice piece of meat well done and eats it with ketchup, it's like i could have made u a $3 burger with ketchup if that's what u wanted but u ruined a $30 piece of meat with ur barbaric ways. Even a dog would know better than to cook a steak all the way through, then again they'd probably eat it raw if they could.

I think you'd make an excellent cook in a steakhouse, hawk, plus those restaurant workers love to drink and do drugs so you'd fit right in. When we break Pops out of prison u can cook us all some prime steaks in celebration.

yeah that can be a problem baba.what kind of salt did you use?very coarse kosher salt is the best and ive over salted before too so dont worry about it too much.and you know,maybe you didnt let it dry out long enough.did you get a good sear?i saw this crazy korean shit on Guga's channel on youtube,you know who he is right?the rich guy who does crazy steaks on youtube?anyway he went to Korea and they water age their steaks.or at least some do.shit looked liked beef jerky tbones.anyway dont be afraid to leave them in the fridge.for me the hardest part is waiting and not cooking them.its basically dry aging but more forgiving if you dont have a perfect dry aging cab or whatever those fancy places call them

also i want to point out i cooked that strip to what i would say medium.i dont think strips should be medium rare but thats just my opinion.i think filets,ribeyes and sirloins should be medium rare.whenever i cook strips and tbones medium rare its just off to me.in my opinion they should be medium.

yeah i was in this fancy bar and grill in this expensive hotel or something in Chicago,i was fucked up,i dont remember where.i ordered a $10 goose island beer and the chefs in the back where getting big gulps of expensive beer from the taps every 10 minutes.im sure thats a sweet job but i cant do it.its a pain in the ass enough cooking for people i know let alone people i dont know.at that point it losses its meaning for me.i wouldnt care how the food tastes cause their is no passion.i cook cause i want to.not because someone told me to.and i bet a lot of chefs would agree.sorry for the whole article but im buzzed and i enjoy talking about cooking.im no where near the best.i break the rules all the time and fuck up.

by the way,i might have a good scheme ive been thinking about.i might have said something before.i trust you guys so ill tell you.yeah im drunk but im on to something.snails.yes snails.pro chefs want snails but 99% of all snails are dead in a can.some pros are willing to pay top dollar for live snails.but theres only like 3 maybe 5 or 6 people in the whole country that provide restaurants with live snails.they are easy to grow and it takes nothing but space.did you know all snails are hermaphrodites?its true.and none of you all better steal my idea! lol im drunk but its true!

I saw that water aged korean steak video, it didnt look like jerky it did look sort of fermented tho compared to a normal wet aged steak.
I'll cook the other 2 steaks later today, see what happens. I dont have any pics of the one yesterday but i got an ok sear not great, maybe next time ill heat up the pan on the stove and then under a broiler and then pop the steaks in while under the broiler, what u think?

I can see ur point, cooking for other people could be a pita, especially if theyre complainers and have bad taste, make u wanna go out there and choke the isht out of them.

Have u ever tried snails, Hawk? I think i had one as a kid, it was gross and kind of crunchy (the inside parts, no shell of course) but ive never had real french escargot, maybe the way they cook it it's real moist and tender and flavorful. But yeah if u can get more people to eat snails then you and I could be the next bubba gump shrimp company, only snails instead of scrimps.

I guess the senator just wants more transparency from the CFP meetings, which isnt a bad thing, Buzz. I guess the current CFP selection committee is mostly Athletic directors, one from each conference including G5? And a retired nfl player and college player, and then a journalist? Before i looked them up earlier this month i thought condoleeza rice was still on it, but i guess she was only on it for a couple years and that ended in 2016.
The senator did say that FSU went from #5 to #4 in CFP rankings after losing jordan travis when they had to come from behind to beat a 5-7 florida team, but i think OSU lost to michigan that week which would explain why they still moved up.
Maybe the committee got freaked out about the 3rd string guy passing for 55 yds vs louisville in the ACC championship, thinking ohmigod the 'Noles will be like Iowa (great D, terrible O) without JT at QB. But like u said, rodemaker is going to play in the bowl game, he's at least serviceable. But i guess FSU's best WR wont play since he's going to the draft, and maybe some of georgia's guys wont play either.

hell no i dont do what Guga does.he has access to the best steaks and ingrediants in the world and he probably dont even have to pay for it.people just give him shit.he even aged a steak in sea urchin.thats wild.broiler is ok baba.probably wont have the sear your looking for but ive broiled good steaks before.never had snails but i was watching a doc about this guy who was a chef and couldnt get fresh snails so he started his own company and almost no one does it.should be a few good games tomorrow.obviously eagles and cowboys is the main game.

Maybe the committee did. That was their decision to make. Maybe they remembered last year's Championship Game.

The best outcome for FSU is to beat Georgia. There will be players on both sides who opt out of the game.

Now that u mention it, these steaks arent thick enough to broil. I'll just sear em up on the cast iron and take pics.

Seems like a lot of the complaints about the cfp's decision is that espn may have had undue influence on the process. The SEC has a broadcast agreement with espn so the network had a financial interest in having an SEC team in the CFP. This is also raising concern that FSU and maybe clemson will leave the ACC for the SEC or B10, although FSU would have to break a contract to do it.
Ur right, TCU got ran over by Georgia in the championship game. I still wonder how they beat michigan in the semi final.
There's still a slight chance FSU could claim a national championship this year, if 1 loss alabama or tx win the cfp and FSU has zero losses, they could be #1 in a major poll/ranking at the end of the year and so honestly could claim a share of the national championship.
