Amen to the comment shared by @Hombre del mont , I did try to do as you suggested with some of the "extra" jars I had hanging around..., and plan to open them up tomorrow at the roughly 6 month mark in the process. I'm not expecting much, but think that the result will at least be a much better storage method than just leaving it in the jars under vacuum seal. I will post pics and thoughts on how things are going so far, for educational purposes!
I do think that the cobs made from more freshly harvested material will work out better, but the product that I had available that I tried cobbing will probably age more "gracefully" than the stuff in jars that is oxidizing over time, albeit slowly. More to follow!!
