But I'll be patient, was it you who said to let them pistil out fully? Would you recommend a late..ish chop on both or just on the Zamaldelica?
Have you ever tried to cure the cobs longer so they get really dark? Or would that already ruin them?
I am not talking composting here, just a longer/stronger fermentation
