You can take cuttings from plants in flower, but it's hit or miss...the further along in 12/12 you are, the less likely they will develop roots. I have gotten cuttings to root until about 2 weeks in 12/12, others here have done it further in I believe. I am pretty sure it can be done.
I have had some luck revegging after flowering but it's stressful to the plant and yours look pretty stressed. I am pretty sure it takes at least a few weeks to get viable seed---that's after the males drop their pollen and you pollenate some female flowers. But I try to avoid seeds so I've never grown one. ;-)
You can keep cuttings in the fridge for a while, but I would do a search on viability...I've heard 'weeks' but I am not speaking from authority.
Sorry if I can't be too helpful. I am pretty sure that you won't get much bud from those given their overall health and container size, but taking a cutting into some new soil may at least ensure you get another shot after Christmas.
Hopefully you'll get some additional input from others here. Use the search engine like crazy...and hopeful you can get something good to come of it.
