I only put a very very small amount of coffee grounds and grass ext. Because I was to scared that it would hurt them
good instincts, and that's what most new growers should do but don't
sounds like you're off to a good start

i had that happen, and it does suck
Yeah, I think a lot of us have experienced that! Lessons learned.
Better to keep inside in sunny area, but you must decide.
And yes, coffee grounds do have nitrogen....seedlings only need a little. You don't want to burn them with nutrients.
Good luck! They look good so far....and understandable you want to guard/protect your growing investment!
