I’ve tried the blender recipes and.. I dunno.. I can never get it to set the same way I can in a pot over a low flame, syringe in one hand whisk in the other. My whisk arm got tired and I kinda stopped making it recently, but I gotta start eating more fish, so here’s my new Rube Goldberg-Esque Hollandaise contraption.
This is a simple hollandaise. I make a couple iterations, but this is what I had laying around. Anyways, stars of the show..
1/2 stick of unsalted butter, canna or otherwise
5-6 ml lemon juice.
1 room temperature egg yolk
Cannabis, cayenne, salt, and pepper to flavor.
Butter is placed to melt on stovetop at low heat.
Egg yolk and Lemon juice are set to whisk at top speed 2 minutes or until yolk visibly begins to acidulate
...Hobo stove is lit.
Melted butter is slowly introduced. It must be introduced slowly enough to fully emulsify with the egg, but quickly enough to stabilize the rising temps. Desired consistency and temps are reached QUICKLY over an open fire this way.
Remove from hot bowl/pot immediately, and store in a thermos. Serve immediately, do not reheat.
Hobostoves are dangerous af and should never be burned inside, with or without adequate ventilation. I’m working on a better solution.. I just.. really wanted some hollandaise with my fish rn..
