My family has kept a sour dough culture since the 1960s. Dad would make these on a special Saturday morning, and sometimes for a church breakfast. They were very popular to say the least.
The culture is kept in the refrigerator and fed flour, water, and sugar from time to time
We mix the culture with the yolks and add a tiny bit of baking soda. The whites are beat with sugar and vanilla untill it forms peaks. Both are then folded together and cooked in butter
The resulting hotcakes are very airy, light, and are wonderful. They are known to be so light, that if you open a window, they will sail right out on the breeze....
