Long ago a friend shared an escargot with me, having never had one before. It was rather tasty. So our next port of call, was Mobile Alabama. Low and behold there was the usual 6 shells, but each shell contained 2 snails. When I asked the waitress, not knowing that most restaurants/venues do not serve "fresh" escargot. She stated in Mobile we call them, "extra cargo".

I didn't wanna spill the beans so to speak but I consider you guys friends so I'll tell you.there is only one business in the US that sells snails to 5 star restaurants.other wis the snails are dead and canned. Fresh snails are actually very hard to get a hold of.ive actually been considering raising snails.btw they are hermaphrodite.i think I'm gonna do it.iv got the greenhouse
