we have all had carrots and tomatos that taste bitter when raw. it's the fertilizer compounds that are absorbed by the plant, before they have broken down into natural forms by bacteria in the ground.
I put some fertilizer around my budding plants and now i want to take it off because the plants are all green, and it didnt rain for 10 days since i laid the fertilizer, and i think that fertilizer in the ground can take a month to become nitrate, and before that it can make buds that taste abit gross.
