I would like to do an organic hydro grow.

Would EJ products be good for that??

Not a chance in hell, they are too ph unstable to be of any real use in hydro.
I have a total disbelief in the whole idea of organics and hydro, I think both are mutually exclusive and both rely on totally different set of scientific principles.
My opinion is if your doing hydro just use a good 2 or 3 part syhtetic fert and that's it, organics rely on microbial decay and composting action to break down elements to feed the plant, this environment is poorly reproduced in water even if it is bubbled properly.
The closest you can get to the best of both worlds is to use a coco medium in a run to wste setup with a hydro-organic fert like PBPro or FF lineup.

I bubble, and adjust the PH of the mix, but I never put lime in my medium when I began (its my first grow - i promise it will never happen again). I have some garden lime, because I havent been able to ge ta hold of dolomite lime...Is it too late to add this to the medium? Put it on the top and water over it...or mix with water and water with it?

Lime is slow to break down and won't seep deep into the soil very well but it is doable, just topdress the soil with about 3-4 tablespoons and water as you normally would, dolomite lime is best for MJ and will make a big diff. in your grow regardless of ferts or method used.
