This is a great and original idea I really hope it works. It's been a long time since I've done chemistry, but I think this is right:

2NaHCO3 → Na2CO3 + H2O + CO2
2 moles of sodium bicarbonate (2x84g) ->1 mole CO2 (44g),
168g sodium bicarbonate -> 44g CO2,
ratio is 3.8:1,
therefore, 10lbs sodium bicarbonate -> 2.6lb CO2
