This is an adaption of a friends recipe...
First, the butter recipe.
14 grams bud from a plant that didn't make the A++ smoke grade. Still plenty of sticky resins.
2 sticks unsalted butter (about 210 grams)
Quick chop of the buds in the food processor and then added to melted butter in a healthy pot of water.
Keep the mixture just at a bare simmer for 2 1/2 hours.
I added 30mL spiced rum at 60 and 90 minutes to help facilitate thc into the fat layer.
Strained into tupperware and then added another small dose of hot water to leaf matter to remove as much butter as possible. Strained and added in tupperware.
Place in freezer for butter to solidify, separate butter from water layer.
Now you've got your butter. I recovered about 165 grams of my original 210 grams of butter. 5 grams of this butter should be equivalent to about 0.33 grams of bud (assuming all thc is absorbed by the butter). This should be a good dose. I'll experiment with friends tonight to let everyone know how the ratios translated.
To make the Choc-Mallow squares.
420 grams (15 oz) dark chocolate
196 grams (7 oz) whipped marshmallow spread
130 grams (appx 4.5 oz) butter from above
Heat chocolate in double boiler until melted.
Add in butter and mix to incorporate.
Fold in marshmallow mixture just to get an even mix.
Spread into your favorite square tin and place in freezer to well set.
Cut into 28 gram (1 oz) squares (approximately 26 servings).
I will post the results in the next day or so as these should be enjoyed by a few folks tonight...
