my grandma makes the best beef broth. the trick is to use the big bones with all the marrow.

Roasting the bones prior to making broth brings out the flavor and adds depth to the broth.

I also roast my bones on a pile of rough cut mirepoix and throw a bit of tomato paste on top in a few globs.

When the mass of flavor comes out I deglaze with red wine and scrape the bits and pieces off the roasting pan.

Throw all of it into a stock pot and cover with cold water. Turn on the heat and reduce to a slow simmer for about three hours. It helps to include parsley stems thyme bay leaves and peppercorns.

I do all my stock/broth in a slow cooker, 5 hours for chicken
and maybe 7 hours for beef.

Nice to have on hand, adds full flavor to any meat dish.

Freeze in small batches, easily defrosted, always on hand.

my favourite is slow roasting a nice leg of lamb (with bone in) with 2 carrots, a large brown onion, and a whole bulb of garlic....

I know its not beef, or broth.... but those juices are heavenly.... has a weird strong flavour like wine or something.... used some beer too once, was even better.... 4-5 hours roasting!
