Those plants are going to get very bushy. You may want to trim off some of the inner branches that are not getting much light.
When do you expect them to start to flower?

Lovely garden! Supercrop noticed no one answered your question on the stem bend... way you did it is good. No problems I see. Personally I like to flatten stem by crushing. Gently twist the topas it falls to the side. Stake and tie the top to the correct height to acheive uniform canopies....
