winter grows in GH

would it be possible to start flowering in a greenhouse at 31N starting at the end of December and take to the end of February? or will they revert back to veg with the increasing light hours?

im at 33N and and watching my greenhouse explode currently. december might be too cold depending on specific local but the light is fine until end of may for flower.
