What causes outdoor flowers to lose smell?

As a new grower, I have a lot of trouble determining if buds are done or not. I have 3 plants that I think are done but I go out there today and they don't smell pungent anymore. Almost like the sun baked off the terpenes and they're just not producing them anymore. Did I let them go too long? I noticed last year I let them go too long (way too long) and only the most terp-heavy plants retained their smell.

Does anyone chop once flowers are heavy and stink, ignoring other factors?

..also wondering if the purple indicates senescence. I don't think temps have been cold enough to turn them purple from temp.. and none of the others have done it.

IME, plants lose smell with a frost, or several. Other than that I have never experienced any lose of smell.
 
Genetics purp up nugs along with environment like the cold...overfertilization could cause it. That plant looks ready to chop to me...at least the top does
