water PH changes?

Hey guys..
question for you. Let's say you adjust the PH of water to some level, say 6.0. Could that ph change over time, i.e., go up or go down? Or will it stay at the ph level?

I'm thinking, if you waited long enough, and the water evaporates, that the ph will go down, i.e., become more acidic.

I usually store water in plastic juice jars for a few days before I use it to water. It comes out of the tap at 6.9 (calibrated meter) and after sitting in the water jars for a few days it normally goes to 8.1. I have no clue if it is the plastic in the jars or whatever chemical they use in the water plant.

yes it can drift.

ill pH my water(with or without nutes) let it sit for about 30 minutes then come back and check it. if it stays the same its good to go. if not ill repeat the process till it comes out to what i want
