Veg. Glycerin for Baking

Well this morning I went to take some tincture (veg. glycerin) this morn. I could not find it! I found the infused olive oil. The problem with that is, I used all of the oil in the last batch of cookies. Guess what? I used the tincture to make cookies. That explains alot! The cookies seemed a little wierd. I thought it was the soy lecthin, it was the glycerin. Maybe I don't really need and meds this morning!!

The cookies were decent, but not as good as normal. My wife's thought was to use infused oil/budder and veg. glycerin for the sugar. That should make a strong cookie, etc.

I will be making some within the next week.

LOL, but they were still cookies, right? I mean, they didn't crumble apart or anything?

You may have found a fat-free cookie recipe, there.

I use glycerin to sweeten my coffee. Such a nice compliment to the caffeine! :whee:

No, they did not fall apart. The texture was a little different, and it tasted like they were made with brown sugar. Overall they were darker, like they had been cooked too long.

Use coconut oil instead of olive oil next time, see how it turns out. Should be cold-pressed for best flavor, etc.

I use my safflower oil infusion for a good high temp baking fat. It makes crusts light and flaky, and keeps well. Cookies made with it kick butt. :yummy:
