Using stems to determine over / under watering?

Can someone confirm what I was told in the hydro store. He said that droopy plants can come from over-watering or under watering. The best way to tell the difference is the stem. Under watered plants will have a droopy stem first. Over watered plants will have a straight stem with droopy leaves. Hard to believe it could be that easy. I have plants with both symptoms.

I'm having both sides of the watering issue with the same strain plants.
Can you show what you use? Can it be used with soil or is this a Hydroponics technique?

Its great for soil.
SIP. Is a self watering pot.

There are an abundance of plans if you google
SIP and Cannabis.

I use 2- 2 gallon buckets as I have hight limitations. I like the bucket version. Easy DIY.
Didn't loose so much as a finger making them.

I am hoping to set up a sip system in my 4' by 4' tray. It is 6 inches deep. I'm not sure if this can support five gallon pots if I fill it with perlite. I would think the perlite would displace like water. Since I have only used grow stones I don't know how supportive perlite is.
