This plant is confusing me as to if it's done

It looks like it's not done but when I look at the trichs there's at least 15-20% amber. But to look at it it looks like it needs longer. It's the exact opposite for the other 2 in the tent. The lights are at lasts 18 inches away and the temps have never gotten past 82°.

"Done" is a combination of a variety of factors, all of which are preference-based, very subjective. Sometimes you may sacrifice a little smell for a little potency, or smell for yield, or any combination of the above, depending on the genetics, if you cut early or late. But it's rarely as dramatic a difference as people make it out to be, in my experience, if we're talking 10 days difference (once it's in reasonable ~ 8+ week flower)

I would say that looks done to me, or very close, within 2 weeks

My favorite method is just to "listen" to the metabolism: is it drinking little water? Did it go through an escalation or burst of big drinking already in late flower? If so, you're good. Usually they will significantly slow drinking and transpiring when they're really done.

One of the problems with allowing a plant to continue after the bloom cycle is mold. If the plant continues to grow after the bud density maxes out the plant will become vulnerable to disease.

The scourge of my reveg attempts... goddamn mold. Agreed. Definitely as soon as the bud isn't perfectly healthy/starts true senescence, it loses circulation to itself, and it's a guaranteed petri dish.
