when bending and softning the plant stems, could you break the stems haud??? all the way up the stem(side branches) so its all soft and floopy??? droopy lol .

Yep.

I've bent, broken, and split my stems to get them where I wanted and to open them up.

She's kinda kinky, cuz she likes it :wink:

I just squeeze the stem till it gives, and maybe roll it between the finger a bit.

so i shouldnt do the whole branch all the way from bottom to top, just pinch roll and bend, away from the plant correct.

if you do too much the growth tips can die off... own experience... if you're going to do the whole branch/stem... do like an inch worth at a time then let it recoup....
