I have read that PH is not as important outdoors as the soil buffers it and is not as critical for nutrient uptake. Your mileage may very...

I believe you have a bit of buffer with soil. But PH does matter a lot.
Try to get it within an idea range. As far as adjusting the water, it depends how far off it is. Changing the PH of soil is a slow process.So watering with a high or low PH water will take time to show problems. Unless it is very extreme Low/high PH.
Just look to mother nature for the answer. Under evergreens the soil tends to be acidic. Mature evergreens have a circle under them that grasses and most weeds will simply not grow in.
There is a ton of info on here or just google how to adjust the PH.
Farmers and vegetable growers have been doing it since the beginning of Farming.
