How To Best Utilize My Space?

I have the new found freedom to build actual grow rooms and I've begun to design the framework of the rooms but I'm still trying to decide on which growing method would be best to utilize the space. I'm building two identical rooms to veg and flower in.

Here is what I'm working with...

6'd X 8'L x 80"H
High Pressure Aero
All climate factors controlled
Lighting is still being determined but currently working with some 600w's & 400w's... Looking at some Gavita 600w 400v later on.
CO2 coming later on
I'll be running clones and planning to veg for 1mo under HID, CO2, HP Aero...

Goals:
2 different strains at a time
Monthly harvest
2lb+/mo

Whichever grow style I use, I need to be able to transfer the plants or entire root zone box from the veg room to the flower room and there is a door between the 2 rooms (Partitioned basement) and that door is only like 30" wide... Another obstacle.

I'm not certain what the best way to grow the plants would be... SOG? ScrOG? I was thinking of 4 1x5 tables running 5 plants per table giving each plant 1sq/ft of space and I'd harvest 10 of the 20 plants per month for a perpetual grow. I figured I would basically mimic my last setup, I ran 9 plants per sq/yd. I let them grow naturally, only topping once and LST.

So, would I be better off just doing LST or, should I ScrOG or would I be better off packing in as many as possible and only letting them veg for like 2wks or less? Or would I be better off ScrOG 2 of each strain & veg'n for 30 days? I could do 2 6x2 ScrOG tables... One for each strain. One nice thing about the fewer but larger plants is less high pressure aero nozzles! Think I could get 2lbs out of 2 big ass girls? 30 days veg, co2, hid, 8-9wk flower...

Are you going to custom build the tables? On casters to roll around? How many of each wattage light do you have? How many more will you get? Do you want to be able to expand as you get more lights? Do you want/need to maintain a work space in the grow room? What other equipment will have to be in there that cant be ceiling mounted?

I'm going to be building the tables, which will actually be the aeroponic containers. The tables need to be 18" tall and they will be on casters so I can easily move them. Everything else is remote mounted. The hoods are about 10" high.

18" for cultivation tables, 10" hoods = 52" left for light height adjustment and plant growth.

Lights are undecided yet but I'm thinking something around 1kW (possibly 3x 315w Philips Elites) for veg and flower would be something like 4x Gavita 600w 400v EL... Like 2 per table.

I do not need a work space, only enough room to move around the plants.

I was thinking 4 1x6 or 2 2x6 tables cuz I could easily fit those through the doors to switch from veg/flower...

Drop the staggered harvest idea and turn your 6x8 into a stacked-bulb vertical room with 2 1kw bulbs. Three levels of plants, 16" apart vertically and 12" apart horizontally. ~48ish plants total (16 or so per level). Bottom row as close to the ground as possible. Put them in at 12"-14" tall, the goal is to have the tops of the lower plants come to the bottom third of the next level up plant when stretch is over. So finished plants around 28" in height. Two zips per plant is the goal, times 48 plants is 100 ounces per harvest, or 6lbs per cycle.

I was gonna say 2400 - 3000 w with 6 2x4 tables for a full bud room. You would have to roll 2 of the tables out to be able to reach everything though.

I was thinking about doing a vertical setup, so I like this idea... Would still set it up for monthly harvests, though but that is OK cuz I would just take my max # of plants and divide it in two, so I'd harvest around 24 plants a month. I have a whole separate veg room and separate feed reservoirs to work with.
